Filipina Adobo Chicken Crockpot Recipe

The other day I was looking for a slow cooker chicken recipe. I make Sprite Chicken often, but was searching for another easy option for cooking chicken in the crockpot.
I came across this Filipino Adobo Pork Or Chicken) With Slow Cooker Variation Recipe from Food.com.
I changed the recipe a little bit, but basically stuck to the main ingredients and directions.
The chicken was juicy, flavorful, and tender. I put my chicken on top of quinoa while my husband ate it with rice.
Filipina Adobo Chicken Crockpot Recipe
Here are the main ingredients that I used:
- 4 pounds of boneless skinless chicken thighs
- 1/2 cup apple cider vinegar
- 1/2 cup soy sauce
- 1 cup water
- A few bay leaves
- 4 garlic cloves (Quick Kitchen Tip – How to Easily Peel Garlic)
- 1 onion
- 3/4 teaspoon ground pepper
- 1 teaspoon salt
I started out with frozen chicken and put it right into the crockpot. Once it had cooked on low for a couple of hours I removed the chicken from the crockpot. I then cut it into about 2 inch pieces and placed all the pieces back in the crockpot to cook a few more hours.
Some people recommend placing frozen chicken in the crockpot, rather than thawing it first. They say it keeps the chicken moist and saves time since you don’t need to thaw it.
That was a great idea! From now on, I’m going to place my frozen chicken right in the crockpot.
