Cinnamon Apple Quinoa Yogurt Parfait Recipe

Yay for quinoa! Oh, the versatility! This morning I made a Cinnamon Apple Quinoa Yogurt Parfait. First, I made a big batch of quinoa this morning to use in various recipes.

INGREDIENTS

– Apple – Nutmeg – Cinnamon – Water – Quinoa – Maple Syrup

I need a breakfast that will satisfy me and keep me going until lunch. Here is yet another way to use quinoa for breakfast and get extra protein from the Greek yogurt.

In a saucepan over medium heat mix apples, nutmeg, cinnamon, and water. Stir about 5 minutes until the apples soften.

You may need to add a little more water during this process so your apples don’t stick to the pan. Turn off the burner.

Transfer the apple mixture to a bowl.

In the same (warm but turned off) saucepan, mix the quinoa with the additional nutmeg, cinnamon, and maple syrup.

Create your quinoa apple cinnamon yogurt parfait by layering the quinoa, apples, yogurt, and repeating until you get to the top.
