Healthy Quinoa and Kale Recipe

You have probably heard about quinoa. It’s a grain that is both high in protein and fiber. It has become quite popular recently especially with those on a gluten free diet.

Pure quinoa is gluten-free. If you follow a gluten-free diet be sure the quinoa you buy is labeled gluten-free. Some have added ingredients.

First, you’ll need to cook the quinoa. I usually use 2 parts water to one cup quinoa.


Before cooking, be sure to rinse off the quinoa in a strainer. I started by boiling 2 cups of water.


Once the water boiled, I added one cup of rinsed quinoa and let it simmer for 20 minutes. You should not need to drain any water. Just stir the quinoa.


I put my extra Easy Tasty Kale in the food processor and then mixed it in with the quinoa.


You may want to add additional seasonings like salt, pepper, and lemon juice to taste. If you want more protein, add some beans such as chickpeas.
