Yay for quinoa!  Oh, the versatility!  This morning I made a Cinnamon Apple Quinoa Yogurt Parfait.
First, I made a big batch of quinoa this morning to use in various recipes.

How to make a basic bowl of plain quinoa
Rinse the quinoa in a strainer. Boil 1 part quinoa with 2 parts water and then simmer for 15 minutes. Let stand for 5 minutes.

I am always looking for recipes that are healthy but substantial. I need a breakfast that will satisfy me and keep me going until lunch.
Here is yet another way to use quinoa for breakfast and get extra protein from the Greek yogurt.
Ingredients
Apple Mixture
- 1 chopped, peeled apple
- 1/4 teaspoon of nutmeg
- 1/4 teaspoon cinnamon
- 1 Tablespoon water
Quinoa Mixture
- 1/2 cup cooked quinoa
- 1/4 teaspoon of nutmeg
- 1/4 teaspoon cinnamon
- 1/2 teaspoon maple syrup
Greek Yogurt
Cinnamon Apple Quinoa Yogurt Parfait Recipe
In a saucepan over medium heat mix apples, nutmeg, cinnamon, and water. Stir about 5 minutes until the apples soften. You may need to add a little more water during this process so your apples don’t stick to the pan.
Turn off the burner.
