Applesauce Muffins Recipe: Healthy Gluten Free Low Sugar

We have a lot of those little applesauce cups the house. My kids used to eat a lot of them, but recently they decided they don’t want them anymore. I was trying to figure out what to do with them and how not to waste food. I decided to use applesauce cups in a gluten free muffin recipe.

Small Batch Gluten-Free Healthy Muffins Recipe Made with Applesauce Cups
Those boxed muffin mixes you buy in the store taste good, but they have a lot of added sugar. I prefer to make my own muffins at home with a lot less sugar. Also, those mixes tend to make about 12 muffins. Sometimes, I just want to make a few muffins.
I came up with a small batch healthy muffins recipe. These muffins are low in sugar, low in fat, but also tastes good. These are also gluten free muffins because they are made with oats. This recipe makes about 4 regular sized muffins.
Low Sugar Healthy Muffins Recipe with Applesauce
Ingredients:
- 3/4 cup of ground oats (I grind my own in a food processor)
- 1/2 teaspoon baking powder
- 1 tsp sugar (I use coconut sugar. You can use white or brown sugar. Add more if you like your muffins on the sweet side.)
- 1 4oz applesauce cup
- 1 egg
First, place muffin cups in a pan and lightly cover with cooking spray. Then, add all of the ingredients in a bowl and mix. Next, pour the mix into the muffin cups. Finally, cook at 400 degrees for 14 minutes.
If you want more crunch to your muffins, then try using whole oats, rather than ground oats.
