Tonight’s Dinner Cheesy Foldovers, Oven Potatoes, and Veggies

What’s for dinner?

I will start posting more and sharing what we are making for dinner.  Usually, we eat at home Sunday through Thursday nights.  Friday and Saturday nights we’ll either pick up food from somewhere or eat in a restaurant.

Tonight for dinner we had cheesy foldovers, oven potatoes, and vegetables.

We make cheesy foldovers about once a month or so.  Here’s my recipe for Meaty Cheesy Foldovers Crescent Rolls Recipe – Easy and Tasty. 

Basically you roll up ground beef and cheese inside a crescent roll. It’s really easy, but not super healthy.  You can make it healthier by using ground turkey (which we did tonight), low-fat cheese, and/or lowfat crescent rolls.

Oven potatoes are a regular side for us. 

Directions to make oven roasted potatoes

  1. Slice sweet potatoes and baking potatoes
  2. Lightly cover in olive oil, season, and bake. 
  3. Bake these at 400 degrees for about 10 minutes on both sides.

We are out of lettuce.  I need to make a run to the store.  We did have some other veggies in the house.  We just cut up some celery, sweet bell peppers, and added sugar snap peas and baby carrots to a bowl.
