Ripe sweet plantain bananas
saba bananas

Tapioca pearls

Instructions
Peel and slice your ripe plantain bananas into bite-sized pieces.
In a pot, bring 3 cups of water to a boil. Add 2 cups of sugar and stir until it dissolves.
Carefully drop in the sliced bananas. Let them simmer until soft and fully cooked. This usually takes about 8 to 10 minutes.
Once the bananas are soft, add in the cooked tapioca pearls. Let everything simmer together for another 2 to 3 minutes. Then turn off the heat.
Set the banana mixture aside and let it cool down to room temperature. This helps prevent the ice from melting too fast when you assemble the dessert.
In a glass, bowl, or any container you like, fill it halfway with crushed ice or ice cubes.
Scoop the banana and syrup mixture over the ice.
Pour chilled evaporated milk over the top. Add as much or as little as you like, it’s all about your taste!
