Preheat oven to 300°F and line a baking sheet with parchment paper.
In a medium bowl, whisk together egg whites and cream of tartar until soft peaks form. Gradually add in the sugar and continue to whisk until stiff peaks form.
In a separate bowl, mix together egg yolks, melted coconut oil, Italian herb seasoning, and sea salt until combined.
Gently fold the egg yolk mixture into the egg white mixture until everything is evenly combined.
Spoon the batter onto the prepared baking sheet in 8 mounds and spread out slightly with a spoon or spatula.
Bake for 25 minutes or until golden brown on top and cooked through in the center. Allow to cool before serving or storing in an airtight container for up to 3 days. Enjoy!
