My Favorite Morel Mushroom Pasta Recipe

For 40 years, I have roamed the woods hunting for morel mushrooms, a tradition passed down from my mother and grandfather. Each excursion is a journey through memories, filled with the anticipation of finding these elusive, earthy treasures.
But once I’ve gathered these delightful fungi, the perennial question arises: What do I do with morels? Today, I’m sharing a special recipe that honors this family tradition, turning the wild morels into a comforting and elegant meal.
This dish combines the unique flavors of morels with the simplicity of butter and the rich, nutty notes of Parmesan—showcasing how simple ingredients can elevate a meal.

Ingredients for Pasta With Morel Mushrooms:
- spaghetti
- fresh morel mushrooms
- 3 tablespoons unsalted butter
- Freshly grated Parmesan cheese (I prefer using fancy Parmesan for its superior flavor, but any Parmesan, such as Kraft, will do)
Instructions to Make Spaghetti with Morels
Prepare the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain and set aside, reserving some pasta water.

Prepare the Morel Mushrooms
Clean the morel mushrooms carefully to remove any dirt or debris. As mentioned in my blog post on sautéing morel mushrooms, it’s important to handle them gently. Quarter the mushrooms to prepare them for cooking.
Sauté the Morels
In a large skillet, melt the butter over medium heat. Add the quartered morels and sauté as detailed in my previous blog post. Cook until the mushrooms are golden and tender, about 5-7 minutes, stirring occasionally.
Combine the Ingredients
Toss the cooked spaghetti with the sautéed morels. Add the grated Parmesan cheese and toss everything together, adding a bit of reserved pasta water if needed to make the sauce creamy. Season with salt and pepper to taste.
